At the corporate office was done in the last twenty years to modernize existing buildings in order to accommodate a wine cellar with modern equipment to work best in each stage of the winemaking process.
The vinification of white grapes is for pressing, followed by immediate cooling of the must after a period of settling slowly ferments at controlled temperatures.
The red grapes after separation from the stems are left to ferment in contact with the skins for a period of 8 / 10 days.
Are then extracted from the skins own dyes, tannins and aromatic substances, at the end of alcoholic fermentation in wine malolactic fermentation takes place which leads to increased softness.
After a series of transfers in order to separate the dregs from the wine, red wines for aging are transferred in the ancient underground cellar of the castle where the wines are to mature for about two years in oak barrels for small and medium
capacity.
