EMILIA ROMAGNA

Pusterla The winery is located in a beautiful corner of Val d'Arda Piacenza hills: hills covered with woods, fields and vineyards, an area of 36 hectares, all united, of which 23 under vine.
The favorable vineyard, the poor fertility of sandy-clay soils, low yields and careful treatment of natural farming reserved for vineyards and to respect as much as possible the natural biological rhythms that can make you pick the best quality grapes, which
are the only safe starting point to achieve an excellent wine.
The cellar is equipped with modern processing equipment allows to work better in wine-making and processing of grapes in order to bring out the best quality of our wines from the Colli Piacentini.
Our reserves are matured in oak casks in the ancient cellar of the castle in a natural environment ideal for the aging of wines to

At the corporate office was done in the last twenty years to modernize existing buildings in order to accommodate a wine cellar with modern equipment to work best in each stage of the winemaking process.
The vinification of white grapes is for pressing, followed by immediate cooling of the must after a period of settling slowly ferments at controlled temperatures.
The red grapes after separation from the stems are left to ferment in contact with the skins for a period of 8 / 10 days.
Are then extracted from the skins own dyes, tannins and aromatic substances, at the end of alcoholic fermentation in wine malolactic fermentation takes place which leads to increased softness.
After a series of transfers in order to separate the dregs from the wine, red wines for aging are transferred in the ancient underground cellar of the castle where the wines are to mature for about two years in oak barrels for small and medium
capacity.
A few years according to a separate room where they were bottling, again a modern facility will help to save the highest quality wine at this delicate stage. These are small details which are implemented at every stage of the transformation process of the grapes that result in a product with excellent organoleptic characteristics.
