One of the most prized cured meats, the fiocco is a relative of the culatello. When the pig’s thigh is cut and the culatello is removed, the ""fiocco"" remains.
The shape is typically that of a mandolin, with a bright red color veined through with white fat. It is aged more than 12 months.
