It's obtained from the must of characteristic Modena grapes.
The must, slowly cooked on an open fire in open vessels, is concetraded so as to reduced to one third of its initial volume.
Thereafter, in house attics, while resting in its dwelling of casks, it faces the heat of summers and the rigors of winters.
The casks come in series of decreasing sizes and of varius woods: oak, mulberry, chestnut, cherry, and, at times, juniper.
Here the Balsamic Vinegar spends years acidifying, ripeniing and aging to achieve a balance that only the alchemy of time and the expert human hand can produce.
Originally conceived as a digestive liqueur to sip after meals, it has since found uses from appetizers to desserts on the menus of the great international Chefs.
It is suitable for strong, well-flavoured and spicy cheeses, for fruit salads with wild berries, strawberries or cherries, for custard cream and ice-cream, for panettone or strudel.
